I'd still run an electric fuel pump. Get a returnless style that you can dead head at the carb like a Holley blue or something. Is this going to be a race / toy or just a cruiser?

IMO, if it has the EFI setup, and it works. Leave it alone. Better fuel mileage ease of use ( less tinkering with the carb, let the computer do the adjusting to weather conditions), and looks cooler.

Its a 67 Mustang coupe with a 5.0 out of a 91 GT and it has an AOD behind it. The car is in the final phase of a resto and the engine is all there except the water pump and upper intake. The owner said it all works but I wanted to get away from the sensors and computer aspects. I wanted the engine to take on a period correct look. I have an extra aeromotive pump but would need a regulator. I'm also not that familiar with the 5.0L engines (sensors, cam, software). Can't be that bad..

Maybe leaving the FI alone is the best thing to do. My intentions are to make it into a quick cruiser. Maybe an MSD ignition, Trick Flow heads and intake.
